  7. Fortune Cookies
  8. Prepare fortunes on small strips of paper. Set aside
  9. Mix together the following ingredients and beat thoroughly to make a batter:

  11. 1 egg
  12. 1/4 c sugar
  13. 2 Tb veg. oil
  14. 1/4 c. corn starch
  15. 2 Tb water
  16.  
  17. Ladle a heaping tablespoon of batter onto medium hot griddle (same temp. as
  18. for pancakes) You may need to use the spoon to spread out batter to keep
  19. the cookie from being too thick or small. Turn cookie after a couple of
  20. minutes to brown second side. Remove from griddle, set on table. While its
  21. still hot - Place fortune in middle and bring two opposite sides of cookie
  22. up and then bring other two ends downward together to fold in half. Once
  23. the cookie is cooled you cannot fold them. It takes a little practice and
  24. some tolerence of handling cookies hot off the grill
